Yeast extract is a natural origin ingredient derived from fresh yeast. Yeast is a unicellular microorganism belonging to the fungus family, occurring in nature for millions of years. It is the same yeast which is used to produce bread, wine, and beer. Yeast extracts are able to provide Meaty and Umami notes largely due to containing significant amounts of glutamic acid, nucleotides, amino acids and peptides. These compounds can intensify and boost the flavor of food products by working synergistically. This is especially true for meat-based/flavored products which benefits from the volatile free amino acids produced by the yeast fermentation process. Moreover, altering the processing method allows for specific meat-boosting properties tailored to the product.
